Leonardo Donnini is one of the few remaining AAeC-certified knife grinders (AAeC is the Italian Knife Grinders and Knife Sellers Association). His father bought the workshop from Master Craftsman Vittorio Galli, who established it in 1930, and passed it on to Leonardo and his wife in 1997.
Donnini are able to repair, grind and sharpen all types of blade: kitchen knives, tailors’ shears, shoemakers’ cutters, wood chisels and many types of work tools. As well as offering top quality worksmanship, they stock a wide assortment of products, and on request can look for specific models and import them directly.
Their customers include many Florentine craftspeople, including renowned tailors and dressmakers, award-winning restaurants and expert lutemakers. Donnini knives were also featured in the 2001 film “Hannibal”, which was filmed in Florence.
